Ingredients
  

Main Ingredients

  • 1 pound asparagus, trimmed Make sure to trim the woody ends
  • 1 cup grated Asiago cheese Can substitute with Parmesan or Pecorino
  • 1/2 cup breadcrumbs For extra crunch, consider adding crushed nuts
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • to taste salt and pepper
  • to drizzle olive oil

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a shallow bowl, mix together the breadcrumbs, grated Asiago cheese, salt, and pepper.
  • Place the flour in another shallow bowl and the beaten eggs in a third bowl.
  • Dip each asparagus spear first in the flour, then into the beaten eggs, and finally roll it in the breadcrumb mixture to coat.
  • Place the coated asparagus spears on a baking sheet lined with parchment paper.
  • Drizzle with olive oil.

Baking

  • Bake for 15-20 minutes or until the spears are golden and crispy.

Notes

These spears can be served warm with dipping sauces such as ranch dressing or aioli. If you have leftovers, store them in an airtight container in the fridge for 2-3 days. To reheat, place them in the oven for a few minutes.
