  • 10 oz goat cheese log
  • 2 large eggs, lightly beaten
  • 1/2 cup flour
  • 1 cup breadcrumbs (Panko preferred) Panko breadcrumbs provide a crunchier texture.
  • 1 cup nuts (pistachios preferred) You can mix different nuts based on preference.
  • 2 tablespoons fresh or dried herbs (rosemary preferred) Feel free to substitute with other herbs.
  • to taste Jam or preserves for topping (cranberry jam preferred) Different jams such as fig or raspberry can be used.

Preparation

  • Preheat your oven to 450 degrees. Line a sheet pan with parchment, foil, or Silpat, and coat it with pan spray.
  • Cut the goat cheese log into rounds about 1/4-inch thick.
  • Toss the goat cheese in flour to lightly coat each piece. Freeze the rounds for at least 30 minutes.
  • In a food processor, process the nuts and Panko until they are less coarse.
  • Chop the herbs and add them to the nut and breadcrumb mixture. Season to taste.
  • Dip each goat cheese round into the beaten eggs, then coat it with the breadcrumb mixture.
  • Spray the tops of the coated cheese rounds with more pan spray.

Baking

  • Bake in the preheated oven for 10-15 minutes until they are golden brown.

Notes

Crispy Baked Goat Cheese is best served warm. Drizzle with jam for a sweet contrast and pair with crackers or salad. For even crispier cheese, ensure to freeze the rounds long enough before baking. Leftovers can be stored in an airtight container in the fridge for up to 2 days; reheat in the oven for best results.
