  • 1 medium medium zucchini (washed and dried) Choose firm, healthy zucchinis for best flavor.
  • 1 tablespoon olive oil Can be substituted with avocado oil.
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon onion powder
  • ½ teaspoon paprika

Preparation

  • Preheat your oven to 450 degrees Fahrenheit. Line two baking sheets with parchment paper.
  • In a large bowl, combine the olive oil, kosher salt, black pepper, onion powder, and paprika, stirring until well incorporated.
  • Thinly slice the zucchini using a knife or mandolin, aiming for even slices about 1/8 inch thick.
  • Add the zucchini slices to the seasoned oil bowl and toss to coat each slice evenly.
  • Place the seasoned zucchini slices in a single layer on the lined baking sheets without overcrowding.

Baking

  • Bake in the preheated oven for 8-15 minutes, watching closely for browning spots.
  • Reduce the oven temperature to 180-200 degrees Fahrenheit and continue baking for an additional 20-40 minutes, checking frequently until crispy.

Cooling and Serving

  • Remove the baking sheets from the oven and allow the chips to cool to reach maximum crispiness.

Notes

For added flavor, consider marinating the zucchini in oil and spices for 30 minutes before baking. Store cooled chips in an airtight container at room temperature for up to 4 days.
