Ingredients
  

For the Salmon Bites

  • 1 lb fresh salmon cut into bite-sized cubes
  • 1/2 cup cornstarch
  • 1 egg whisked
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper
  • oil for frying vegetable or avocado oil

For the Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha adjust to taste
  • 1 tsp honey
  • 1 tbsp lime juice

Instructions
 

  • Pat the salmon dry and cut it into bite-sized pieces. Season with salt, pepper, garlic powder, and paprika.
  • Place cornstarch in one bowl, whisk the egg in another, and add panko breadcrumbs to a third. Dip each salmon bite into the cornstarch, then egg, then panko, pressing gently to coat well.
  • Heat oil in a pan over medium heat. Fry the salmon bites in batches for about 2-3 minutes per side, until golden and crispy. Drain on a paper towel-lined plate.
  • In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
  • Gently toss the crispy salmon bites in the bang bang sauce or serve it on the side as a dip. Garnish with chopped green onions or sesame seeds, and enjoy!

Notes

For extra crispiness, double-coat the salmon bites by dipping them in egg and panko a second time. Adjust the spice level by adding more sriracha or red pepper flakes.
