Main Ingredients

  • 2 cups potatoes peeled and grated
  • 1 cup corn kernels fresh, frozen, or canned (drained)
  • 1 cup cheddar cheese shredded, sharp preferred
  • 1/2 cup onion finely chopped
  • 2 eggs lightly beaten
  • 1/3 cup all-purpose flour
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • salt and pepper to taste

For Frying

  • vegetable oil for frying

Instructions
 

  • Grate the potatoes and squeeze out as much moisture as possible using a clean kitchen towel.
  • In a large bowl, mix grated potatoes, corn, cheddar, onion, eggs, flour, garlic powder, paprika, salt, and pepper until well combined.
  • Heat about 1/4 inch of vegetable oil in a large skillet over medium heat until shimmering.
  • Scoop 2–3 tablespoons of mixture per fritter into the skillet, flattening slightly. Fry in batches without overcrowding.
  • Cook for 3–4 minutes per side until golden and crispy. Transfer to a paper towel-lined plate to drain.
  • Serve warm with your favorite dipping sauce like sour cream or spicy aioli.

Notes

Customize with jalapeños, scallions, or herbs. Make ahead and freeze for quick snacking later. For gluten-free, use a 1:1 flour substitute or cornstarch.
