Main ingredients

  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 cup shredded cheese (cheddar or Mexican blend) Feel free to use different cheese types for varied flavors.
  • 1 teaspoon taco seasoning Adjust to taste.
  • 8 small tortillas Small flour or corn tortillas work well.
  • Oil for frying or baking Olive oil or vegetable oil can be used.

For serving

  • Sour cream For dipping.
  • Salsa For dipping.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) if baking.
  • In a skillet, cook the ground beef with taco seasoning until browned.
  • Remove from heat and stir in shredded cheese until melted.

Assembly and Cooking

  • Place a spoonful of the beef mixture on each tortilla, roll tightly, and secure with a toothpick if necessary.
  • If baking, brush with oil and place on a baking sheet. Bake for 20-25 minutes until golden.
  • If frying, heat oil in a pan and fry taquitos until crispy.

Serving

  • Serve hot with sour cream or salsa.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. They can be reheated in the oven or air fryer. You can also prepare the filling a few hours in advance and store it in the fridge until ready to use. For a healthier option, bake instead of frying.
