Crispy Hot Honey Feta Chicken
A delicious combination of crispy chicken seasoned to perfection, creamy feta cheese, and a sweet-spicy honey drizzle, perfect for weeknight dinners or entertaining guests.
Ingredients
For the Honey Sauce
- 1/3 cup Honey
- 1 1/2 tsp Hot Sauce
- 3/4 tsp Chilli Flakes
For the Chicken
- 2 pieces chicken breasts (250g or 9oz each) Horizontally sliced to create 4 pieces
- 2 tsp Paprika
- 1 tsp Salt
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Dried Oregano
- 1/2 tsp Black Pepper
- 1/4 tsp Cayenne Pepper
- 35 g Plain Flour
- 2 Eggs (beaten)
- 65 g Panko Breadcrumbs
- as needed Veg Oil (approximately 6 to 8 tbsp)
- 200 g Feta (crumbled)
Instructions
Preparation
- Combine honey, hot sauce, and chili flakes in a bowl; warm in the microwave for 20 seconds and cool.
- Horizontally slice chicken breasts to create 4 pieces.
- Mix paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper.
- Line up 3 shallow dishes: flour with half the seasoning, beaten eggs, and Panko with the rest of the seasoning.
- Dredge chicken in flour, then egg, then breadcrumbs, placing on a tray.
Cooking
- Heat oil in a large pan over medium-high heat.
- Fry chicken for 3-4 minutes per side until golden and cooked through.
- Place chicken on a wire rack.
- Top chicken with crumbled feta and grill until golden.
- Drizzle with hot honey and serve.
Notes
For baking, preheat oven, prepare breadcrumbs, and bake chicken instead of frying. Slicing the chicken evenly helps with even cooking. Adjust the level of hot sauce to suit your taste. Let the honey mixture cool before drizzling over the chicken to prevent melting the toppings. To store, keep in an airtight container in the refrigerator for up to 3 days, reheating in the oven for crispiness. For freezing, wrap tightly in foil for up to a month.
