Crispy Hot Honey Feta Chicken

Ingredients
  

For the hot honey sauce

  • 1/3 cup Honey
  • 1 1/2 tsp Hot Sauce (e.g. Frank's or Cholula)
  • 3/4 tsp Chilli Flakes Adjust for heat preference

For the chicken

  • 2 pieces 250g/9oz Chicken Breasts Slice horizontally to create four pieces.
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Cayenne Pepper
  • 1/2 tsp Black Pepper
  • 35 g Plain Flour
  • 65 g Panko Breadcrumbs
  • as needed (6-8) tbsp Veg Oil For frying
  • 200 g Feta (crumbled)

Instructions
 

Make the hot honey sauce

  • Combine the honey, hot sauce, and chilli flakes in a bowl. Warm it in the microwave for about 20 seconds until warm. Stir and let it cool.

Prepare the chicken

  • Slice the chicken breasts horizontally to create four even pieces.
  • In a small bowl, mix the paprika, salt, onion powder, garlic powder, oregano, cayenne pepper, and black pepper.
  • Set up three large shallow dishes: flour mixed with half of the seasoning in the first, beaten eggs in the second, and Panko breadcrumbs with the remaining seasoning in the third.
  • Coat each chicken piece by dredging it in flour, dipping it in egg, and rolling it in breadcrumbs.

Cook the chicken

  • Heat enough oil to coat the bottom of a large pan over medium-high heat. When the oil is hot enough, add the chicken pieces.
  • Fry for 3-4 minutes on each side until the chicken is deep golden brown and cooked through. Place on a wire rack.
  • Sprinkle crumbled feta generously over the chicken and place it under the grill on high until the feta turns golden and is soft.

Serve

  • Serve the chicken with desired amount of hot honey drizzled over the top.
  • Store any leftover honey in the fridge.

Notes

For extra crispiness, let the coated chicken rest for a few minutes before frying. Ensure the oil is hot enough before adding the chicken to prevent it from becoming greasy. Feel free to adjust the amount of hot sauce and chili flakes to suit your taste.
