Chicken and Coating

  • 4 pieces Chicken thighs Bone-in, skin-on for best results.
  • 1 cup Breadcrumbs Panko breadcrumbs recommended for extra crunch.
  • 1/2 cup Flour All-purpose flour, can substitute with gluten-free.
  • 2 pieces Eggs Beaten.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Pepper Freshly ground.
  • 1 teaspoon Paprika For flavor and color.
  • 1/2 teaspoon Garlic powder Optional, for added flavor.
  • 1/2 teaspoon Onion powder Optional, for added flavor.
  • as needed sprays Oil spray To help the chicken crisp up.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a bowl, mix flour, salt, pepper, paprika, garlic powder, and onion powder.
  • Beat the eggs in another bowl.
  • Dip each chicken thigh in the flour mixture, then into the egg, and finally coat with breadcrumbs.
  • Place the chicken on a baking sheet.
  • Spray the chicken with oil to help it crisp up.

Cooking

  • Bake for 35-40 minutes or until golden brown and cooked through.

Serving

  • Serve warm with sides like coleslaw, cornbread, or mashed potatoes.

Notes

For extra crunch, use panko breadcrumbs instead of regular ones. Make sure to coat the chicken thighs evenly for the best texture. You can vary seasonings based on taste.
