  • 4 pieces salmon fillets
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix together the Parmesan cheese, breadcrumbs, garlic powder, parsley, salt, and pepper.
  • Drizzle olive oil over the salmon fillets, then press the Parmesan mixture onto the top of each fillet.
  • Place the coated salmon fillets on a baking sheet lined with parchment paper.

Cooking

  • Bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden and crispy.
  • Serve with lemon wedges.

Notes

Make sure the salmon fillets are thoroughly dried before adding the olive oil and topping. This helps the crust adhere better. For an even cheesier topping, mix in some shredded mozzarella cheese with the Parmesan.
