Ingredients
  

For the Sushi Rice

  • 2 cups sushi rice Rinsed until water runs clear
  • 2.5 cups water For cooking rice
  • 2 tablespoons rice vinegar Adds tang to the rice
  • 1 tablespoon sugar To sweeten the vinegar mixture
  • 1 teaspoon salt For seasoning

For Frying

  • 4 cups vegetable oil For frying the rice squares

For the Spicy Tuna Mix

  • 1 pound ahi tuna, diced Use sushi-grade tuna
  • 2 tablespoons mayonnaise For creaminess
  • 1 tablespoon sriracha sauce Adjust spiciness to taste
  • 1 fresh jalapeño, thinly sliced For topping
  • soy sauce For serving
  • sesame seeds Optional, for garnish

Instructions
 

Preparation of Sushi Rice

  • Rinse the sushi rice under cold water until the water runs clear.
  • In a medium pot, combine the rinsed rice and 2 1/2 cups of water. Bring to a boil, then reduce heat, cover, and let it simmer for 18-20 minutes.
  • Remove from heat and let it rest for 5 minutes. Allow the rice to cool slightly.
  • Mix rice vinegar, sugar, and salt in a small bowl until dissolved. Fold this mixture into the cooled rice and let it cool completely.

Frying the Rice Squares

  • Heat vegetable oil in a deep pot over medium-high heat until it reaches about 375°F.
  • Press the seasoned sushi rice into a square or rectangle dish about 1-inch thick. Cut into squares.
  • Carefully add the rice squares into the hot oil in batches, frying for 2-3 minutes until golden brown and crispy, turning halfway through.
  • Remove and drain on paper towels.

Preparing the Spicy Tuna and Assembly

  • In a medium bowl, combine diced tuna, mayonnaise, and sriracha. Adjust spice level to taste.
  • Top each crispy rice square with a scoop of spicy tuna mixture and a slice of jalapeño.

Serving

  • Serve immediately with soy sauce on the side and sprinkle with sesame seeds if desired.

Notes

For best texture, serve hot or warm. Can store leftovers in an airtight container in the fridge for up to 2 days. Reheat rice squares in the oven for crispness.
