Crock Pot Cheesy Chicken Spaghetti is creamy, comforting, and easy to make. With tender chicken, spaghetti, and a rich cheese sauce, it's the perfect slow cooker meal for busy nights, potlucks, or meal prep.
Add chicken, cream of chicken soup, diced tomatoes with green chilies, chicken broth, garlic powder, onion powder, and black pepper to the slow cooker. Stir gently. Cover and cook on low for 3-4 hours until chicken is tender.
Remove the chicken and shred with two forks. Return shredded chicken to the slow cooker and stir in cheddar cheese and cream cheese until melted and combined.
Add uncooked spaghetti and stir to coat in sauce. Cover and cook on low for 30-40 minutes more, stirring once, until pasta is tender.
Notes
Stir pasta halfway through cooking to prevent sticking. Add more broth if sauce thickens too much. Great for meal prep — freezes well in portions up to 2 months.
