Main Ingredients

  • 1.5 pounds boneless, skinless chicken breasts Can use frozen chicken breasts with adjusted cooking time.
  • 2 tablespoons Cajun seasoning Adjust based on spice preference.
  • 1 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 0.5 yellow onion sliced
  • 3 cups low-sodium chicken broth
  • 8 ounces cream cheese Cubed for easier melting.
  • 1 cup shredded Parmesan cheese Plus extra for serving.
  • 12 ounces penne or rotini pasta
  • Fresh parsley For garnish.
  • Extra Parmesan cheese For serving.
  • Crushed red pepper flakes For serving, optional.

Instructions
 

Preparation

  • Rub chicken breasts with Cajun seasoning, garlic powder, paprika, salt, and pepper. Optionally, marinate for 15–20 minutes.

Cooking

  • Place the seasoned chicken in the slow cooker. Add sliced bell peppers, onion, and chicken broth.
  • Cook on low for 6–7 hours or high for 3–4 hours.
  • Remove the chicken and shred it with forks, then return it to the slow cooker.
  • Add cream cheese and Parmesan. Stir until melted and creamy. Cook an additional 10–15 minutes on low.
  • Cook pasta separately according to package directions until al dente. Drain and stir into the slow cooker mixture.

Serving

  • Serve hot, garnished with parsley, extra cheese, or red pepper flakes.

Notes

To store leftovers, let the pasta cool, then place in an airtight container. Refrigerate for up to 3 days. Reheat gently, adding broth if too thick.
