  • 4 pieces chicken breasts Boneless and skinless preferred
  • 1 packet ranch seasoning mix
  • 2 Tbsp Taco Seasoning
  • 1 can black beans (15 ounces, drained and rinsed)
  • 1 can Rotel (8 oz) Diced tomatoes with green chilies
  • 1 can corn (15 ounces, not drained) Sweet corn adds sweetness and texture
  • 1 block cream cheese Add more for creaminess if desired
  • 2 pieces fresh limes For squeezing over the dish

Instructions
 

Preparation

  • Add the chicken to the crock pot.
  • Place all the ingredients except the limes and the cream cheese in the crock pot.

Cooking

  • Cover and cook on high for 3-4 hours or low for 6-8 hours.
  • After cooking, shred the chicken with two forks.
  • Squeeze the limes over the chicken mixture.
  • Add the cream cheese and stir to combine.
  • Continue to heat in the crock pot until the cream cheese is fully melted, usually 30-60 minutes.

Serving

  • Serve over rice or with tortillas, and enjoy!

Notes

For added spice, mix in jalapeƱos or add some hot sauce. You can also swap out chicken breasts for chicken thighs for a juicier option. For a vegetarian version, replace the chicken with extra beans and vegetables like zucchini or bell peppers.
