Ingredients
  

Meat

  • 1 lb lean ground beef Adds heartiness without too much fat.
  • 1 lb Italian sausage Choose mild or spicy based on your preference.

Vegetables

  • 1 medium yellow onion, chopped Sweet and savory flavor foundation.
  • 4 cloves garlic, minced Essential for aroma and flavor.

Soup Base

  • 28 oz crushed tomatoes (canned) Provides the base of the soup.
  • 4 cups low-sodium chicken broth Adds depth to the flavor.

Pasta and Dairy

  • 8 oz lasagna noodles, broken into pieces Perfect texture for the soup.
  • 15 oz ricotta cheese Adds creaminess and richness.
  • 2 cups shredded mozzarella cheese Melts beautifully on top.

Seasonings

  • 2 tsp Italian seasoning A blend of Italian herbs.
  • to taste salt and pepper Essential for enhancing flavor.

Instructions
 

Preparation

  • In a large skillet over medium heat, brown the ground beef and Italian sausage until fully cooked. Drain excess grease.
  • In the same skillet, sauté the chopped onion and minced garlic until translucent.

Cooking

  • In your crock pot, combine the browned meats, sautéed onion and garlic, crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper. Stir gently.
  • Add the broken lasagna noodles and stir again.
  • Cover and cook on low for 4 hours or high for 2 hours until noodles are tender.
  • Just before serving, stir in the ricotta cheese until melted, then top with shredded mozzarella cheese. Let it melt.

Notes

For best flavor, cook on low. To prep ahead, chop vegetables and brown meats beforehand and store them in the fridge.
