Ingredients

Main Ingredients

  • 1 pound kielbasa, sliced
  • 4 cups potatoes, diced
  • 1 medium onion, chopped
  • 2 cups shredded cheese (cheddar or your choice)
  • 2 cans cream of potato soup
  • 1 cup milk
  • to taste Salt and pepper to taste
  • Chives or green onions for garnish (optional)

Instructions

Preparation

  • In your slow cooker, combine the diced potatoes, sliced kielbasa, and chopped onion. Ensure everything is evenly distributed for an even cook.
  • In a separate bowl, thoroughly mix the cream of potato soup with the milk. Pour this mixture over the potato mixture in the slow cooker. It’s essential to mix it well to ensure every piece gets coated.
  • Stir the mixture gently to combine thoroughly and season with salt and pepper to taste, adjusting based on personal preference.

Cooking

  • Cover your slow cooker, and let the mixture cook on low for 6-8 hours, or on high for 3-4 hours, until the potatoes are tender.
  • About 30 minutes before you’re ready to serve, stir in the shredded cheese. Cover again, allowing time for it to melt and blend into the dish, creating that cheesy goodness.

Serving

  • Dish out your meal hot, garnished with chopped chives or green onions for a fresh contrast. Enjoy the hearty flavors of this comforting dish!

Notes

To store leftovers, transfer them into an airtight container. They can last in the refrigerator for up to 3-4 days, or freeze for 2-3 months. For a creamier consistency, blend the soup mixture before adding it to the slow cooker.
