Preparation

  • Start by putting the chicken breast at the bottom of the crockpot.
  • Add the chopped vegetables on top of the chicken.
  • Pour the low-sodium broth over everything.
  • Sprinkle your chosen spices on top.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • When done, shred the chicken and mix everything together before serving.

Notes

For storage, let the meal cool down. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months. Thaw in the fridge before reheating. For best flavors, marinate the chicken overnight before cooking.
