  • 2 pounds beef chuck roast
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 8 rolls sandwich rolls Crusty rolls recommended
  • 8 slices provolone cheese

Cooking

  • Place the beef chuck roast in the slow cooker.
  • Add sliced onion and minced garlic on top of the meat.
  • Pour beef broth and Worcestershire sauce over the ingredients.
  • Season with black pepper and salt.
  • Cover and cook on low for 8 hours or on high for 4 hours until the beef is tender.
  • Once cooked, remove the beef and shred it.
  • Strain the cooking liquid to serve as au jus.
  • Place shredded beef on sandwich rolls, top with provolone cheese, and serve with the au jus for dipping.

Notes

For extra flavor, add herbs like thyme or rosemary to the slow cooker. If you prefer a thicker au jus, you can mix in a cornstarch slurry at the end of cooking. Experiment with different cheeses, such as mozzarella or cheddar, for a twist on the classic. For a spicy version, add jalapeƱos or pepper jack cheese. For a vegetarian option, substitute the beef with mushrooms or jackfruit cooked in a vegetable broth.
