Meatball Ingredients

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1 large egg
  • 1 onion, finely chopped
  • 1 packet French onion soup mix
  • 1 cup beef broth
  • 1 cup shredded cheese (Swiss or mozzarella)
  • to taste Salt
  • to taste pepper
  • Fresh parsley for garnish

Instructions
 

Preparation

  • In a large bowl, combine ground beef, breadcrumbs, egg, chopped onion, French onion soup mix, salt, and pepper. Mix well and form into meatballs.
  • Place the meatballs in the crockpot.

Cooking

  • In another bowl, mix beef broth and pour over the meatballs in the crockpot.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until cooked through.
  • During the last 30 minutes of cooking, sprinkle shredded cheese on top and cover until melted.

Serving

  • Serve hot, garnished with fresh parsley.

Notes

You can store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze them for up to 2 months. Thaw in the refrigerator before reheating. For extra flavor, sauté the chopped onions before mixing.
