For the Chicken

  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika

  • 1 Juice of 1 lemon
  • 1 cup low-sodium chicken broth or water

For the Tzatziki

  • 1 large cucumber, grated and drained
  • 1 cup Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon red wine vinegar

For Serving

  • Pita bread
  • Fresh vegetables (tomatoes, lettuce, red onion, etc.), for garnish

Preparation

  • Season the chicken breasts with salt, pepper, oregano, cumin, and smoked paprika. Drizzle olive oil over the chicken, ensuring an even coating.

Cooking

  • Place the seasoned chicken in your crockpot. Pour the chicken broth or water over it, then squeeze the lemon juice on top. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

Making the Tzatziki

  • In a bowl, combine the grated cucumber, Greek yogurt, chopped dill, red wine vinegar, salt, and pepper. Mix well and adjust seasoning according to taste. For best flavor, allow it to chill in the fridge for about 30 minutes.

Final Steps

  • Once cooked, remove the chicken from the crockpot and shred it using two forks. Return shredded chicken to the pot, stirring to combine with the cooking liquid.
  • Warm the pita bread, then layer in the shredded chicken. Top generously with tzatziki and your choice of fresh vegetables.
