  • 1 tablespoon rice vinegar Adds a nice tang.
  • 1 teaspoon ground ginger Fresh ginger can also be used.

  • 1 bunch chopped green onions For garnish.

Preparation

  • In a medium bowl, mix together the honey, soy sauce, minced garlic, rice vinegar, ground ginger, salt, and pepper until well combined.
  • Place the chicken thighs in the Crockpot, then pour the honey garlic mixture over the top, ensuring all pieces are well-coated.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

Serving

  • Serve garnished with chopped green onions for a pop of color and fresh flavor.

Notes

Serve hot over rice or noodles and consider pairing with steamed vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for up to 3 months. Reheat gently for best results.
