  • 1 pound ground beef Can substitute with turkey or a plant-based option.
  • 1 package taco seasoning A key flavor enhancer.
  • 8 ounces pasta (elbow or penne) Choose your favorite shape.
  • 2 cups beef broth Chicken broth can also be used.
  • 1 can diced tomatoes with green chilies Adds flavor and a kick.
  • 2 cups shredded cheese (cheddar or Mexican blend) Melted cheese enhances creaminess.
  • 1 cup black beans Optional but adds protein.
  • 1 cup corn Optional but adds sweetness.
  • to taste salt and pepper Essential for flavor enhancement.
  • for garnish chopped green onions Adds a fresh touch.

Instructions
 

Preparation

  • In a skillet over medium heat, brown the ground beef until cooked through and fragrant. Drain excess fat.
  • Sprinkle taco seasoning into the skillet with the beef, and mix well.
  • In the crockpot, combine the seasoned beef with pasta, beef broth, diced tomatoes, black beans, and corn.
  • Gently stir everything to ensure it’s well mixed. Cover with the lid.

Cooking

  • Set the crockpot to cook on low for 4-5 hours or high for 2-3 hours, until pasta is tender.
  • About 15 minutes before serving, stir in the cheese until melted.
  • Season with salt and pepper as needed.
  • Serve hot, garnished with chopped green onions.

Notes

Adjust spice levels by choosing milder tomatoes. This recipe is great for meal prep and leftovers can be transformed into a pasta bake.
