Ingredients

  • 2 cups shredded boneless skinless chicken breasts
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 8 oz cream cheese Can be cut into cubes for easier melting.
  • 1 packet taco seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 cups chicken broth

Instructions
 

Preparation

  • In the bottom of the crockpot, add the shredded chicken, corn, black beans, diced tomatoes, chicken broth, taco seasoning, garlic powder, onion powder, salt, and pepper.
  • Stir until well combined.
  • Place cream cheese on top.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • About 30 minutes before serving, stir to incorporate the cream cheese.
  • Adjust seasonings to taste, and serve warm.

Notes

Serve warm in bowls with toppings such as shredded cheese, green onions, cilantro, or sour cream. Pairs well with tortilla chips or bread. For extra flavor, add lime juice before serving.
