Ingredients
  

Pasta and Vegetables

  • 2 cups cooked pasta Use any type of pasta you prefer.
  • 1 cucumber, diced Salting and draining beforehand can prevent sogginess.
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, chopped
  • 1/4 cup fresh parsley, chopped For garnish and flavor.

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons vinegar (white wine or apple cider) Adjust to taste.
  • Salt and pepper to taste

Preparation

  • In a large bowl, combine the cooked pasta, diced cucumber, halved cherry tomatoes, chopped red onion, and parsley. Mix them gently until evenly distributed.
  • In a small bowl, whisk together the olive oil, vinegar, salt, and pepper until well blended.
  • Pour the dressing over the pasta salad and toss to combine thoroughly.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

Serve cold for the best taste. Can be made a day ahead and stored. More veggies like bell peppers or zucchini can be added.
