  • 2 pieces cucumbers sliced
  • 1 pieces avocado diced
  • 1 cup corn canned or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup mozzarella balls

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • to taste salt
  • to taste pepper
  • optional fresh herbs such as basil or cilantro

Preparation

  • In a large bowl, combine the sliced cucumbers, diced avocado, corn, halved cherry tomatoes, and mozzarella balls. Ensure you mix everything evenly for a homogenous distribution of flavor.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined and slightly emulsified, taking about 1-2 minutes.
  • Pour the dressing over the salad and toss gently to combine all the ingredients. Pay attention not to mash the avocado while mixing!
  • If you decide to use fresh herbs, sprinkle them on top before serving for added flavor.
  • Serve immediately for the best texture, or refrigerate the salad for up to 30 minutes if you prefer it chilled.

Notes

Best served chilled. Can be garnished with fresh herbs or a drizzle of olive oil. Great as a side dish or light lunch.
