  • 2 cups cucumber, diced
  • 1/4 cup green onion, chopped
  • 1/4 cup fresh herbs (such as cilantro or parsley), chopped Experiment with different herbs like dill or basil.

Dressing

  • 1/2 cup Greek yogurt or mayonnaise
  • 1 fruit Juice of 1 lime Squeeze some extra for added zest.

Instructions
 

Preparation

  • In a large bowl, combine the shrimp, cucumber, green onion, and herbs.
  • In a separate bowl, mix the Greek yogurt (or mayonnaise) with lime juice, salt, and pepper.
  • Pour the dressing over the shrimp and cucumber mixture and toss gently to combine.

Chilling

  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad is best served fresh. Store leftovers in an airtight container in the fridge and consume within 1-2 days for optimal freshness.
