Salad Ingredients

  • 1 cup strawberries, hulled and sliced Use ripe strawberries for best flavor.
  • 1 large English cucumber, thinly sliced Alternatively, use 3 Persian cucumbers.
  • 1/4 cup crumbled feta or goat cheese (optional) Add for a creamy texture.
  • 2 tbsp chopped fresh mint or basil Fresh herbs enhance the flavor.
  • 2 tbsp slivered almonds, sunflower seeds, or walnuts (toasted, optional) Add for crunch.

Dressing Ingredients

  • 1 tbsp fresh lemon juice or balsamic vinegar Adjust according to taste.
  • 1 tsp honey or maple syrup Use to balance flavors.
  • 2 tbsp olive oil
  • Salt and black pepper, to taste Season as needed.

Instructions
 

Preparation

  • Wash and dry the strawberries and cucumbers. Hull the strawberries and slice them.
  • Thinly slice the cucumber into rounds or half-moons.

Make Dressing

  • In a small bowl or jar, whisk together the lemon juice, honey, olive oil, salt, and pepper to create the dressing.

Combine Salad

  • In a large mixing bowl, combine the sliced cucumbers, strawberries, chopped herbs, and cheese, if using.

Finish Salad

  • Drizzle half of the dressing over the salad and gently toss everything together without smashing the strawberries.
  • Transfer to a serving platter, garnish with nuts or seeds and more herbs, then drizzle remaining dressing over the top.

Notes

Best enjoyed chilled, this salad is ideal for warm weather. Pair with grilled proteins or refreshing beverages.
