  • 1 package gnocchi
  • 1 cup sun dried tomatoes, chopped Use oil-packed for more flavor.
  • 4 cups vegetable broth Adjust for desired thickness.
  • 1 cup coconut milk
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 teaspoon Italian seasoning Can substitute with pesto.
  • to taste salt and pepper

Instructions
 

Preparation

  • In a large pot, heat some oil over medium heat and sauté the onion and garlic until translucent.
  • Add the sun dried tomatoes and cook for another 2 minutes.
  • Pour in the vegetable broth and bring to a boil.
  • Add the gnocchi and cook according to package instructions.
  • Lower the heat and stir in the coconut milk and Italian seasoning.
  • Season with salt and pepper to taste.

Serving

  • Serve hot in bowls, garnish with fresh basil and a sprinkle of extra Italian seasoning if desired. Pair it with crusty bread for a complete meal.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove, adding water or broth as needed.
