  • 1 cup ricotta cheese For creamy texture.
  • 1 cup mozzarella cheese, shredded To be mixed in and garnished.

Instructions
 

Preparation

  • In a large pot, sauté the onion and garlic until translucent.
  • Add the shredded chicken, chicken broth, crushed tomatoes, broken lasagna noodles, Italian seasoning, salt, and pepper.
  • Bring to a boil, then reduce heat and let it simmer for about 15-20 minutes, or until the noodles are cooked.
  • Stir in the ricotta cheese and half of the mozzarella cheese until creamy.
  • Serve hot, garnished with the remaining mozzarella, Parmesan cheese, and fresh basil.

Notes

Use a variety of cheeses for extra flavor. Leftover veggies can be added for nutrition. Adjust broth for desired soup consistency. Don't skip garnishes.
