  • 2 cups cooked rice Use leftover cooked rice to save time.
  • 1 lb chicken breast, cut into cubes You can use cooked chicken or marinate in tzatziki for added flavor.
  • 1 cup tzatziki sauce Extra tzatziki can be served on the side.
  • 1 cup cherry tomatoes, halved Fresh tomatoes add flavor.
  • 1 cucumber diced Provides a refreshing crunch.
  • 1/2 onion chopped Adds depth of flavor.
  • 2 tablespoons olive oil For cooking and flavor.
  • to taste Salt and pepper Adjust based on preference.
  • Fresh parsley for garnish Optional, for presentation.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large baking dish, combine the cooked rice, chicken, tzatziki sauce, cherry tomatoes, cucumber, onion, olive oil, salt, and pepper.
  • Mix everything together until well combined.

Cooking

  • Cover the dish with aluminum foil and bake for 25-30 minutes, or until the chicken is cooked through.
  • Remove the foil and bake for an additional 10 minutes.
  • Garnish with fresh parsley before serving.

Notes

This dish can be served directly from the baking dish or plated with garnishes. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven before serving.
