Ingredients
  

Main Ingredients

  • 2 lbs chicken thighs or breasts Thighs for a juicier result, breasts for a leaner option.
  • 1 cup teriyaki sauce
  • 2 cups broccoli florets
  • 1 cup sliced bell peppers
  • 1 cup carrots, sliced
  • 2 cups rice or noodles For serving.
  • to taste sesame seeds Optional garnish.
  • to taste green onions, sliced Optional garnish.

Instructions
 

Preparation

  • Place the chicken in the crockpot.
  • Pour the teriyaki sauce over the chicken.
  • Add the broccoli, bell peppers, and carrots to the crockpot.

Cooking

  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through.
  • Once cooked, shred the chicken if desired and stir to combine with the vegetables and sauce.

Serving

  • Serve over rice or noodles.
  • Garnish with sesame seeds and sliced green onions if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months. To reheat, thaw overnight and warm in the microwave or on the stove. You can add more vegetables like snap peas or baby corn for a colorful dish.
