  • 4 cups Rice Chex cereal
  • 1 cup semisweet chocolate chips
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • Pastel candy-coated chocolate eggs
  • Sprinkles (optional)

Preparation

  • In a large bowl, measure out the Rice Chex cereal and set aside.
  • In a saucepan over low heat, combine chocolate chips, peanut butter, and butter. Stir until melted and smooth, about 5-7 minutes. Add vanilla extract and mix well.
  • Pour the chocolate mixture over the Rice Chex and gently stir to thoroughly coat the cereal.
  • In a large zip-top bag, add the powdered sugar. Carefully add the coated cereal and shake well until all pieces are coated with powdered sugar.
  • Spread the mixture onto a baking sheet lined with parchment paper to cool for approximately 30 minutes.
  • Once cool, sprinkle with pastel candy-coated chocolate eggs and add sprinkles if desired.

Serving

  • Serve in a large bowl at room temperature for optimal crunchiness.

Notes

Store in an airtight container at room temperature for up to one week. You can freeze individual portions for up to a month. Avoid reheating in the microwave to maintain crunch.
