  • 0.5 cups unsalted butter, softened Make sure it's at room temperature.
  • 1 cup milk Can use almond milk for a dairy-free option.
  • 2 large eggs Can be substituted with flaxseed meal mixed with water for a vegan option.
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 0.5 tsp salt
  • Food coloring Use your choice of food coloring.

Frosting and Toppings

  • Frosting to top (store-bought or homemade)
  • Decorative sprinkles or Easter-themed toppings

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy (about 3-4 minutes).
  • Add the eggs, vanilla extract, and milk to the mixture. Stir until combined.
  • In a separate bowl, combine the flour, baking powder, and salt. Gradually add this to the wet mixture, mixing until just combined.
  • Add food coloring if desired and mix until the color is evenly distributed.

Baking

  • Pour the batter into cupcake liners, filling each about two-thirds full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cooling and Frosting

  • Remove from the oven and cool the cupcakes in the pan for 5 minutes.
  • Transfer to a wire rack to cool completely before frosting.

Serving

  • Serve at room temperature and decorate with frosting and toppings as desired.

Notes

Store in an airtight container at room temperature for up to 3 days; freeze for up to 3 months. Allow to thaw in the refrigerator overnight before serving.
