  • 2 cups Leftover fruit, any variety Use ripe bananas, apples, strawberries, or mixed berries.
  • 1 tablespoon Sugar Optional, adjust based on taste.
  • 1 tablespoon Lemon juice Optional, adds brightness to flavor.

Preparation

  • Preheat the oven to 170°F (75°C).
  • Blend leftover fruit in a food processor until smooth.
  • If desired, add sugar and lemon juice to taste and blend again.
  • Pour the fruit puree onto a baking sheet lined with parchment paper. Spread it out evenly to about 1/8 inch thick.

Baking

  • Bake in the oven for 6-8 hours or until the fruit leather is dry but still slightly tacky to the touch.
  • Check around the 6-hour mark to ensure the texture is right.

Storage

  • Once cool, cut into strips and roll them up for storage.
  • Store in an airtight container.

Notes

Store homemade fruit leather in an airtight container at room temperature for up to a week, or refrigerate it for up to two weeks. Freeze it by cutting into strips, layering with parchment paper, and storing in a freezer-safe bag for up to three months.
