Ingredients

Pancake Batter

  • 1 cup pancake mix (like Bisquick)
  • ¾ cup milk
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 3 tablespoons maple syrup plus extra for serving
  • 2 tablespoons maple sugar or brown sugar optional, for extra maple flavor

Filling

  • 4 large eggs season with salt and pepper
  • 4 slices American cheese
  • 8 strips bacon, cooked until crispy OR 4 breakfast sausage patties
  • Butter or cooking spray for greasing

Instructions

Preparation of Batter

  • In a medium bowl, whisk together the pancake mix, milk, 1 egg, and vegetable oil until just combined. It’s okay if there are small lumps.
  • Gently fold in 3 tablespoons of maple syrup and maple sugar if using. Let the batter rest for 5 minutes.

Cooking Pancakes

  • Heat a non-stick skillet over medium heat and lightly grease it with butter or cooking spray.
  • For uniform pancakes, place a 3.5-inch round cookie cutter or a mason jar ring on the cooking surface. Pour about 3 tablespoons of batter into each ring.
  • Cook the pancakes for 2-3 minutes until bubbles form on the surface and edges look set. Carefully remove the ring, flip the pancake, and cook for another 1-2 minutes until golden. Repeat to make a total of 8 pancakes, keeping them warm under a towel.

Cooking Eggs and Meat

  • In the same skillet, cook the eggs using the ring molds if desired. Crack the eggs into the rings, break the yolks, and season with salt and pepper. Add water, cover, and cook for 1-2 minutes for set whites and 3-4 minutes for fully cooked yolks.
  • Cook the bacon until crispy (around 3-4 minutes per side) or heat the sausage patties according to package directions.

Assembling the McGriddles

  • Place one pancake down, add a slice of cheese, the cooked egg, and then 2 strips of bacon or 1 sausage patty. Top with a second pancake.
  • Press gently to create the sandwich and for extra flavor, brush the tops lightly with warm maple syrup before serving.

Notes

Serve your McGriddles right away while they're warm with extra maple syrup for drizzling. Store leftovers in an airtight container in the fridge for up to 3 days. You can reheat them in the microwave or skillet. Let the pancake batter rest for fluffiness and ensure your skillet is hot for golden pancakes. Customize with different types of cheese or toppings like avocado or hot sauce.
