  • 2 pieces ripe bananas Use very ripe bananas for the best flavor and sweetness.
  • 1 cup oats Gluten-free oats can be used for a gluten-free version.
  • 1/2 cup peanut butter Almond butter can be used for nut allergies.
  • 1/4 cup honey or maple syrup Reduce the amount for a less sweet cookie.
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • optional chocolate chips or nuts Fold into the dough if desired.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, mash the ripe bananas until smooth.
  • Add the oats, peanut butter, honey (or maple syrup), vanilla extract, and baking soda to the mashed bananas. Stir until well combined.
  • If desired, fold in chocolate chips or nuts.
  • Drop spoonfuls of the cookie dough onto the prepared baking sheet.
  • Bake for 10-12 minutes or until the cookies are golden and set.
  • Let them cool for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm or at room temperature. They pair nicely with tea or coffee. For an extra touch, try spreading nut butter on top before eating. Store in an airtight container for up to 3 days, in the refrigerator for up to a week, or freeze for up to 3 months.
