  • 4 count Tortillas
  • 4 count Eggs
  • 1 cup Cheddar cheese Shredded
  • 1 pound Sausage Cooked and crumbled
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste
  • 2 tablespoons Cooking oil For frying

Instructions
 

Cooking the Sausage

  • In a skillet, cook the sausage over medium heat for about 5-7 minutes, stirring occasionally, until it is browned and fully cooked.

Whisking the Eggs

  • While the sausage is cooking, crack the eggs into a bowl and whisk them together with a pinch of salt and pepper until well combined.

Scrambling the Eggs

  • Pour the whisked eggs into the skillet with the sausage and gently scramble them over medium heat for about 3-5 minutes until fully cooked.

Warming the Tortillas

  • In a separate skillet or microwave, warm the tortillas until pliable, about 30 seconds on each side over medium heat.

Assembling the Taquitos

  • Take a tortilla and fill it with a spoonful of the egg and sausage mixture, then top with cheddar cheese.
  • Roll the tortilla tightly to enclose the filling.

Frying the Taquitos

  • Lightly fry the taquitos in cooking oil heated to about 375°F for 2-3 minutes on each side until golden brown and crispy.

Serving

  • Serve the taquitos warm, optionally with fresh salsa, avocado slices, or sour cream.

Notes

For storage, place leftovers in an airtight container in the refrigerator for up to 3 days or freeze wrapped tightly for 2-3 months. To reheat, thaw overnight in the fridge and microwave or oven until warmed through.
