Ingredients
  

For the cheesecake filling

  • 8 oz Cream cheese, softened Make sure it's at room temperature.
  • 1/2 cup Powdered sugar To sweeten the filling.
  • 1 tsp Vanilla extract For flavor.
  • 1 cup Fresh strawberries, chopped Use ripe strawberries for best flavor.

For assembly

  • 4 medium Flour tortilla shells Soft and pliable tortillas.
  • 1 cup Strawberry glaze For drizzling over the tacos.
  • 1/2 cup Graham cracker crumbs For coating the taco edges.

Preparation

  • In a medium-sized bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until the mixture is completely smooth and creamy, about 2-3 minutes of stirring.
  • Gently fold in the chopped strawberries with a spatula until evenly combined, being careful not to break them apart too much.

Assembly

  • Take a flour tortilla shell and fill it with the cheesecake mixture, spreading it evenly within the shell. Repeat this process for each tortilla.
  • To add a crunchy touch, dip the edges of the filled shells into a plate of graham cracker crumbs, ensuring they are well-coated.
  • Drizzle strawberry glaze over the filled tacos and optionally top with additional fresh strawberries for a beautiful presentation.
  • Serve immediately, enjoying the delightful blend of textures and flavors in each bite!

Notes

Best enjoyed fresh, but can be stored in an airtight container in the refrigerator for up to 2-3 days. Assemble tacos with filling just before serving for optimal texture.
