Ingredients
  

Main Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 4 large flour tortillas
  • 1 tablespoon olive oil

Optional Ingredients

  • 1/2 cup diced bell peppers optional
  • 1/2 cup diced onions optional

For Serving

  • Sour cream
  • Salsa

Instructions
 

Preparation

  • Heat a skillet over medium heat and add olive oil.
  • If using, sauté the diced bell peppers and onions until soft, about 3-4 minutes.
  • On one half of each tortilla, layer shredded chicken, cheese, and sautéed vegetables.

Cooking

  • Fold the tortillas in half and place them in the skillet.
  • Cook each side for 3-4 minutes or until crispy and golden brown.
  • Remove from heat, cut into wedges, and serve with sour cream and salsa.

Notes

You can use leftover rotisserie chicken to save time. Experiment with different cheeses for a unique flavor. Add spices or herbs to the chicken for an extra kick. These quesadillas are also great with a fresh salad or guacamole.
