Ingredients
  

For the Soup Base

  • 1 tablespoon olive oil To sauté the onions.

  • 2 tablespoons tomato paste Boosts richness and color.
  • 25 ounces tomato basil pasta sauce Choose your favorite brand.
  • 28 ounces diced canned tomatoes Provides texture and acidity.
  • 4 cups chicken broth More can be added if desired.
  • 2 teaspoons kosher salt, divided Enhances flavor.

For the Noodles and Creaminess

  • 12 pieces lasagna noodles, uncooked and broken into 2" pieces Soak up flavors and add heartiness.
  • ½ cup heavy cream (optional) For an ultra-creamy texture.

For Topping

  • 1 cup shredded mozzarella cheese Melts beautifully into the soup.
  • ½ cup freshly grated parmesan cheese Adds nutty flavor.
  • ½ cup ricotta cheese For that creamy bite.
  • 6 tablespoons fresh basil, finely chopped Adds freshness to the dish.

Instructions
 

Heat Up the Flavor

  • Heat the olive oil in a large pot or Dutch oven over medium heat.

Sauté the Aromatics

  • Add the finely diced onion and cook until soft and translucent, about 3-5 minutes.
  • Toss in the ground beef, breaking it up, and sauté until browned.

Stir in Garlic and Spices

  • Stir in minced garlic, red pepper flakes, 1 teaspoon of kosher salt, dried oregano, and tomato paste, cooking for 1-2 minutes.

Add the Saucy Goodness

  • Stir in the tomato basil pasta sauce, diced tomatoes, and chicken broth. Bring to a gentle boil.
  • Add the broken lasagna noodle pieces and the remaining 1 teaspoon kosher salt.

Simmer to Perfection

  • Reduce heat to a simmer, cooking until noodles are tender, about 10-12 minutes.

Add Creaminess and Cheese

  • Stir in heavy cream, and add shredded mozzarella or parmesan cheese until melted.

Serve with Love

  • Ladle soup into bowls and top with dollops of ricotta, extra mozzarella, parmesan, and fresh basil.

Notes

For extra flavor, add fresh herbs and pair with garlic bread. This soup can be prepped ahead and is great for leftovers.
