  • 2 cups cooked rice
  • 2 cups broccoli florets Fresh or frozen
  • 1 lb chicken breast, diced Can use raw chicken
  • 1 cup cheddar cheese, shredded Can substitute with other cheese varieties
  • 1 can cream of chicken soup Can use low-fat or homemade version
  • 1 cup chicken broth Can substitute with vegetable broth for a vegetarian option
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Preparation

  • In a slow cooker, combine the diced chicken, cooked rice, broccoli florets, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
  • Cover and cook on low for 4-6 hours, or until the chicken is cooked through.
  • During the last 30 minutes of cooking, add the shredded cheddar cheese and stir to combine.
  • Serve warm and enjoy!

Notes

This dish is best served warm. For storage, let it cool before transferring to an airtight container. Store in the fridge for up to 3 days or freeze for up to 3 months.
