  • 6 large eggs Beaten until fluffy.
  • 1/2 cup cooked bacon, crumbled Add for flavor; can substitute with sausage or ham.
  • 1 cup fresh spinach, chopped Can be replaced with other vegetables.
  • 1/2 cup shredded cheese Optional ingredient for extra flavor.
  • to taste Salt and pepper Season as preferred.
  • Non-stick cooking spray To grease the muffin tin.

Preparation

  • Preheat the oven to 350°F (175°C) and grease a muffin tin with non-stick cooking spray.
  • In a mixing bowl, beat the eggs until fluffy and season with salt and pepper.
  • Stir in the crumbled bacon, chopped spinach, and shredded cheese (if desired).
  • Pour the egg mixture evenly into the muffin tin, filling each cup about three-fourths full.

Baking

  • Bake for 20-25 minutes, or until the egg muffins are set and lightly golden on top.
  • Let them cool slightly before carefully removing them from the tin.

Notes

Store in an airtight container in the refrigerator for up to five days or freeze for up to three months. Reheat in the microwave or oven.
