  • 2 pieces eggs for scrambling
  • 3 cups leftover rice preferably cold
  • 3 tablespoons soy sauce adjust to taste
  • 2 tablespoons vegetable oil for cooking
  • 1 cup peas or mixed vegetables can substitute with other vegetables
  • 2 pieces green onions chopped for garnish

  • Heat vegetable oil in a pan over medium heat until shimmering, about 1-2 minutes.
  • Crack the eggs into the pan and scramble them until fully cooked, about 2-3 minutes. Transfer them to a plate and set aside.
  • Add the cold leftover rice to the pan, breaking up clumps and stir-frying for about 5-7 minutes until heated through and starting to slightly crisp.
  • Pour in the soy sauce, mixing it well into the rice so that it is evenly distributed and slightly dark in color.
  • Stir in the peas or mixed vegetables and the chopped green onions, cooking for an additional 2-3 minutes until vegetables are tender and vibrant.
  • Return the scrambled eggs to the pan, folding everything together gently until combined. Serve hot and enjoy!

Notes

For added flavor, consider mixing in garlic or ginger while cooking. Serve hot with a side of egg rolls or dumplings for an authentic touch.
