Ingredients
  

For the cookie crust

  • 1 cup brown sugar packed
  • 1/2 cup unsalted butter, softened Ensure it's softened to room temperature
  • 1 large egg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

For the frosting and topping

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • assorted fresh fruit (e.g., strawberries, blueberries, kiwi, peaches) Choose your favorites

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, cream together the brown sugar and butter until smooth.
  • Add the egg, flour, baking soda, and salt, mixing until combined.
  • Spread the cookie dough onto a greased baking sheet in a circle shape to form the crust.
  • Bake for about 10-12 minutes or until lightly golden. Let it cool.
  • In a separate bowl, beat together the cream cheese, powdered sugar, and vanilla until smooth.
  • Once the crust is cool, spread the cream cheese frosting evenly over the top.
  • Arrange the fresh fruit on top of the frosting.

Serving

  • Slice and serve chilled as a delicious summer dessert.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. For best results, add the fruit just before serving. You can also add a sprig of mint on top for an extra touch of freshness.
