  • 1 large large egg, at room temperature Ensure it's at room temperature for a smoother emulsion.
  • 1 tablespoon Dijon mustard Feel free to replace with garlic or spicy mustard for a twist.
  • 1 tablespoon white vinegar or lemon juice Adjust for tanginess to your preference.
  • 1 cup neutral oil (like avocado or sunflower oil) Can substitute with olive oil for different flavor.
  • Salt, to taste

  • In a tall mixing jar or the cup of an immersion blender, combine the egg, Dijon mustard, and white vinegar or lemon juice. Blend on high for about 10 seconds until well mixed.
  • With the blender running, very slowly drizzle in the oil, starting with just a few drops at a time to create a stable emulsion.
  • After around 30 seconds, begin pouring a little faster, blending until the mayonnaise thickens and can coat the back of a spoon, about 1-2 minutes overall.
  • Once thick and creamy, taste and add salt to your liking. Transfer to an airtight container.

Notes

Store in the refrigerator for up to one week for freshness. Avoid microwaving; gently blend again after thawing if freezing.
