  • In another bowl, beat the egg whites until stiff peaks form.
  • Gently fold the egg whites into the yolk mixture until just combined.

Cooking

  • Heat a non-stick skillet over low heat and grease it with butter.
  • Pour batter into molds or directly onto the skillet, cover, and cook for about 4-5 minutes on each side until golden brown.

Serving

  • Serve pancakes warm, stacked high on a plate with maple syrup and fresh fruits.

Notes

Beat the egg whites until they form stiff peaks for the fluffiest pancakes. Use low heat while cooking to ensure they cook through without burning. Consider using round molds for perfect souffle shapes.
