Main ingredients

  • 1 large eggplant Fresh and firm eggplant
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 bell pepper, diced Any color bell pepper
  • 14 ounces can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste Salt
  • to taste pepper
  • Fresh parsley for garnish

Instructions
 

Preparation

  • Slice the eggplant into rounds and sprinkle with salt. Let it sit for about 30 minutes to draw out moisture.
  • Rinse the eggplant slices and pat them dry with paper towels.

Cooking

  • Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, cooking until they are soft.
  • Add the diced bell pepper and cook for a few more minutes.
  • Stir in the diced tomatoes, thyme, basil, salt, and pepper.
  • Add the eggplant slices to the skillet and mix well.
  • Cover the skillet and let everything simmer for 20-25 minutes, or until the eggplant is tender.
  • Once done, taste and adjust seasoning if needed.

Serving

  • Serve hot, garnished with fresh parsley.

Notes

Store any leftovers in an airtight container in the refrigerator for 3 to 4 days, or freeze for longer storage. Use fresh herbs for better flavor, and you can add cheese for a creamier texture or grill the eggplant slices for a smoky flavor.
