Ingredients
  

For the meatballs

  • 1 lb ground beef or turkey You can use either ground beef or turkey.
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 1 large egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the sauce

  • 1/4 cup chili sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons honey or brown sugar Use honey for sweetness or brown sugar for a deeper flavor.

For the coconut rice

  • 2 cups cooked rice
  • 1 cup coconut milk
  • 1/2 cup shredded coconut (optional) Optional topping for added texture.

Instructions
 

Preparation

  • In a bowl, mix ground meat, breadcrumbs, green onions, egg, garlic, salt, and pepper. Form into meatballs.

Cooking

  • In a pan, cook meatballs on medium heat until browned and cooked through.
  • In a separate bowl, mix chili sauce, soy sauce, and honey or brown sugar. Pour over the meatballs and simmer for a few minutes.
  • For coconut rice, combine cooked rice and coconut milk in a pot. Heat until warmed through.

Serving

  • Serve meatballs over coconut rice, and top with shredded coconut if desired.

Notes

For extra flavor, let the meatballs marinate in the sauce for at least 30 minutes before cooking. This dish can also be made vegetarian with plant-based meat alternatives.
