Ingredients
  

Eggplant and Filling

  • 2 large large eggplants
  • 2 cups ricotta cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano

Sauce and Topping

  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Slice the eggplants lengthwise into thin strips and grill or bake them for about 10 minutes until soft.
  • In a bowl, combine ricotta cheese, egg, minced garlic, dried oregano, salt, and pepper.

Assembly

  • Spread a thin layer of marinara sauce on the bottom of a baking dish.
  • Place a spoonful of the ricotta mixture on each eggplant strip and roll them up.
  • Arrange the rolls in the baking dish seam-side down and cover with remaining marinara sauce.
  • Top with shredded mozzarella and grated Parmesan cheese.

Baking

  • Cover the dish with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes until the cheese is bubbly.

Serving

  • Garnish with fresh basil before serving.

Notes

Make sure to slice the eggplants thinly for easy rolling. Feel free to add different spices/herbs or switch up the cheeses for variety.
