Main Ingredients

  • 4 pieces chicken thighs Skin-on, bone-in for more flavor.
  • 1 cup rice You can use long-grain or basmati.
  • 2 cups chicken broth Homemade broth intensifies the flavor.
  • 1 piece onion, chopped Yellow or white onion works best.
  • 2 cloves garlic, minced Freshly minced for the best flavor.
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika For added flavor and color.
  • 1 cup frozen peas Add at the end to heat through.
  • 1 tablespoon olive oil For sautéing.

Preparation

  • In a large pan, heat the olive oil over medium heat until it shimmers.
  • Add the chopped onions and minced garlic to the pan. Sauté for about 4-5 minutes until the onions are golden brown.
  • Push the sautéed onions to the side and place the chicken thighs skin-side down in the pan. Cook for 5-7 minutes on each side until browned.
  • Pour in the uncooked rice followed by the chicken broth. Season with salt, pepper, and paprika, stirring gently.
  • Increase the heat to high and bring to a gentle boil. Once boiling, reduce the heat to low.
  • Cover the pan and let it simmer for about 30 minutes until the rice absorbs the liquid and the chicken is tender.
  • After 30 minutes, sprinkle the frozen peas over the mixture, cover again, and let sit for 5 more minutes.
  • Serve the cozy chicken and rice in bowls, garnished with parsley or lemon zest if desired.

Notes

Leftovers can be stored in airtight containers in the refrigerator for up to 3 days. For freezing, cool completely before sealing in freezer-safe containers for up to 3 months. Reheat gently on the stovetop for best texture.
